French Toast Overnight Casserole
Ingredients:
large loaf of French bread (16 oz.)
1 c. light brown sugar, packed
1/3 c. salted butter, melted
2 Tbsp. maple syrup
3/4 c. chopped pecans
4 large eggs, lightly beaten
1 c. milk
2 Tbsp. sugar
1 tsp. ground cinnamon
1 tsp. vanilla extract
Steps:
1) Spray or butter 9x13 baking dish.
2) Cut French bread into 20 slices, about 3/4 inch thick.
3) In a bowl, combine brown sugar, melted butter, and maple syrup.
4) Spread mixture onto the bottom of the baking dish.
5) Sprinkle chopped pecans on top of the brown sugar mixture.
6) Place bread slices in two layers on top of the pecan layer, ensuring that the slices are laying flat.
7) Whisk together eggs, milk, sugar, cinnamon and vanilla; pour this egg mixture evenly over the layered bread.
8) Cover the dish with aluminum foil and set in fridge overnight for a minimum of 8 hours.
9) Preheat oven to 350° F. Bake the dish for 35-40 minutes.
10) Cut into squares and serve warm with maple syrup.
